Formosa Bites [East Coast Tasmania] + Anchovy [Melbourne]

Hailing from their farm near Orford on the east coast (via Taiwan), Sam Gardner and Tang-Ya Yang of Formosa Bites grow a lot of what they cook themselves. Last year they produced a Winter Feast stunner with their satay-basted and BBQ’d squid on a stick, and this year will see them collaborating with Thi Le of Anchovy in Melbourne. With Thi’s Vietnamese-Australian style meeting the Taiwanese-Tasmanian influence and fruits of the Formosa farm, it’s sure to be a cracker.
