Winter Feast
21–24 June

A fermentation whiz meets a NZ hāngi expert. After running the popular Salamanca cafe Tricycle for eleven years, Adam has been cooking all over and studying fermentation (you might know him from his Rough Rice appearances at the Mona Market and previous Winter Feasts). A culinary star of Wellington, Monique has cooked in Michelin-starred New York restaurants and, these days, hosts pop-up food events around New Zealand that champion the traditional Maori style of hāngi (cooking with the earth).
